Brief description: The project deals with food production from the point of view of safety, productivity, traceability, quality and sustainability, promoting good health through a correct and careful diet. In order to ensure food quality and sustainability of the agri-food supply chains, it is necessary to control the production and the origin of raw materials and their processing, ensuring nutritional validity and safety. Food production systems must become extremely efficient, supply chains able to produce safe and nutritious food, reducing at the same time the environmental impact. The project will study existing food chains and test innovative solutions on cereal, dairy, vegetable and medicinal plants supply chains. The project is implemented into four research lines (WP), plus one for the management of the project and one for the communication of the most significant results. WP1 - Safe Food – will develop rapid methods for the determination of some pathogens, mycotoxins and contaminants on various food matrices. WP2 will deal with Smart Food and the possibility of enhancing and improving the nutritional capacity of foods through the addition of components such as biomolecules and innovative phytocomplexes, too. WP3 - Sustainable Food - will be dedicated to the sustainability of processes, the enhancement and recovery of by-products, the application of alternative methodologies in the treatment of low-cost raw materials. WP4 -Health - will address the effects of smart nutrition on maintaining health and a good quality of life.
